Beef fillet with white truffle

FILETTO AL TARTUFO

Ingredients – serves 4: 4 slices of beef fillet, 80 g of white truffle cream, 80 g ham, 4 slices of fontina cheese, 50 g butter, half glass of white wine, flour, salt, pepper.


Procedure: open up the beef fillets and place 1 slice of fontina cheese and 1 slice of ham in the middle and cover with truffle cream. Close the slice, cover with flour on all sides and fry in molten golden butter. Before removing from flame sprinkle with white wine and allow it to evaporate on high flame. Sprinkle salt and pepper. Serve hot.
